But the gaucho still symbolizes the bravery and toughness of rural life and the love for freedom that his life in the pampas allowed.

Like the North American cowboy, he wears leather boots, uses spurs and carries a whip. Some gauchos wear a hat made of felt. This is called a chambergo (chahm-BAYR-goh). The gaucho's wide pants are called bombacha (bohm-BAH-chah). They are either tight at the ankle or tucked inside boots. The gaucho's poncho— made of cloth or wool — serves as clothing or as a blanket. Finally, the boleadora (boh-lay-ah-DOH-rah) is a lasso, or leather cord, with about three leather-covered balls of stone or other heavy material. The gaucho uses this to rope animals by the legs.

Living on the pampas, gauchos became experts in preparing and preserving beef. This resulted in charqui (CHAHR-kee), slices of beef that were dried in the sun and salted. The English word "jrky" comes from charqui. Because of the gaucho's history, Argentina is now famous for its roast beef dishes and barbecues.
